- Never beat egg whites in an aluminum pan. This will darken them.
- To prevent cakes from sticking, sprinkle the cake pan with equal parts flour & sugar.
- To prevent cakes from burning, sprinkle salt in the oven under the cake pan.
- Take the cake from the oven, place it for a very short time (seconds) on a cloth wrung out of cold water. Then it will turn out easily without sticking to the pan.
- If a recipe calls for melted butter. Measure after melted, not before.
- Always sift flour and powdered sugar before measuring. All dry ingredients included in the recipe should be sifted together before adding to the rest of the batter.
- Softening butter in the microwave always turns out soupy on me. That's why I love this tip. Heat a small bowl with boiling water or the microwave. Let stand a minute. As soon as you empty the water, put the hot bowl upside down over the butter. In just a few minutes the butter will be perfectly softened.
- A funnel works great when separating the egg white from the yoke.
- If some of the yolk ends up in your egg white, moisten a cloth with cold water, touch the yolk and it will adhere to the cloth.
- Slightly heat an orange for easy peeling and to get the skin off in one piece.
- Heat lemons well before using and there will be twice the quantity of juice.
- When cooking pancakes dip the spoon in milk or water and the batter will drop off the spoon easily.
- Before scraping new potatoes, soak them for half an hour in cold water that has been salted This will make the skins peel off easily.
- To bake potatoes quickly, boil them in salted water for ten minutes, then put them into the oven.
- To help rid the house of cooking odors, put a little vinegar in an open saucepan on the stove.
- Peel onions under water and they will not irritate the eyes.
- To make meat tender, put in strong vinegar water for a few minutes.
- When making soup remember this; soup boiled is soup spoiled. Cook soup gently and evenly.
- All seasonings should be added very gradually to soup, or the flavor may be too strong.
- What can you do to correct over salted soup? You can add a teaspoonful of sugar or a few small pieces of new turnip will work too, just simmer a little longer. This will neutralize the salt flavor.
- Grate a raw potato and add it to your soup when you put too much salt in it. The potato absorbs the salt.
- Pick one of these three remedies not all three! You know someone will try it.
- A little finely grated cheese added to thin soup improves the taste immensely.
