Potato Soup

This is an absolutely delicious potato soup recipe that came from my dad's neighbor.  She is somewhere in her 90's and she wrote the recipe from memory because she said she "stopped needing the directions years ago". 

     3-5 lbs peeled & diced potatoes (just depends on how much you want).  Melt 1/2 stick butter in pot.  Cook chopped onion (optional) in butter for about 5 minutes.  Add potatoes and enough water to cover.  Boil until fork tender.  Drain half the water.  Add 2 cups milk, small sour cream, one can cream of chicken soup, one can cream of celery soup, one pound chopped velveeta, and bacon or ham.  She uses 1 bag of chopped ham pieces.  Serve with crusty bread.

Everyone loves this soup when I make it even if I don't add the onions.  Give it a try.
